Bean and vegetable salad

Ingredients (serves 5 to 6):
Lemon garlic dressing:
6 tbsp lemon juice
4 tbsp sesame seeds
1 clove garlic, crushed
2 tsp light soy sauce or 1 tsp miso paste

60g French beans, sliced thinly
60g long beans, sliced thinly
50g fresh button mushrooms, sliced
50g red, green and yellow capsicum, sliced thinly
50g carrot, cut into strips
50g purple cabbage, shredded
50g cabbage, shredded

Method:
1. Mix all the dressing ingredients together and set aside.
2. Put the sliced vegetables in a large mixing bowl. Pour dressing over and toss. Serve immediately.
